This Pistachio Fluff, also known as Watergate Salad to some people, is one of my favorite side dishes to make for Easter Dinner. It’s light and sweet and oh-so-fluffy, a fan favorite for sure!

I think every family happens to have one of these kinds of dishes in their family’s repertoire. And in our family this is IT! I loooooved this fluff as a child and still do as an adult. It’s one of those weird midwestern dishes that people call salads even though there are no actual vegetables in it.

 And I promise there are no weird ingredients that totally don’t belong, everything in this dish goes well together and if you like pistachios or pistachio flavored things (yummm ice cream!) you are for sure going to love this!

This is one of those dishes I could totally get fat on. You know what I mean? I could take a scoop of this, eat it, and then keep coming back to it over and over again and never get sick of it.

I’m pretty sure it’s the combination of whipped topping (yes, otherwise known as Cool Whip…but you can now by this better version with no hydrogenated oils and no high fructose corn syrup so you can feel better about eating it!) and mini marshmallows that give it the perfect amount of fluff. And of course adding in the acidic crushed pineapple helps combat the sugar coma you (okay, me) might otherwise have from eating it all in one sitting. 🙂

Ingredients
1 8 oz container of thawedwhipped topping
1 3.4 oz box pistachio pudding mix
1 20 oz can of crushed pineapple, drained
3 cups mini marshmallows
¼ cup chopped pistachios, optional

Instructions
1. In a large mixing bowl, add all the whipped topping and pistachio pudding and whisk together gently.
2. Then fold in the pineapple and mini marshmallows.
3. Sprinkle with chopped pistachios, optional.
Enjoy!

I know, I know. This recipe is ridiculously easy. But, you would be surprised at how many people have never had the good fortune to try such a delightful dish!!!

You honestly cannot go wrong with this on your table this Easter. Or really any meal for that matter. I will say it also does extremely well at BBQs!
